Morning Chaos & Hunger Strike
Okay, so I woke up STARVING. Like, stomach yelling at me kinda hungry. Wanted something fast, good for dropping a few pounds, and obviously vegan. Scanned the cupboards like a hungry raccoon.

Found some rolled oats hiding behind expired protein powder (oops). Looked in the fridge: half a block of firm tofu, a sad-looking zucchini, and a slightly wrinkled bell pepper. Okay, ingredients were happening.
Option 1: The Lazy Oats
First try was boring but fast. Grabbed a pot, dumped in:
- Half cup oats
- One cup water
Whacked the stove on medium-high. Stirred it like my life depended on it. Got thick quick. Poured it into a bowl. Added:
- A big spoonful of peanut butter (no sugar kind!)
- Handful of frozen berries (straight from the freezer bag)
- Small sprinkle of chia seeds
It looked… gloppy. Tasted good though! Warm, peanutty, berries adding that sweet tang. Stuffed me decently. Cleanup was stupid easy too, just one pot.
Option 2: Scramble Madness
Had more time later this week. Crunched up the half-block of tofu with my hands into crumbly bits. Threw it in a non-stick pan with zero oil – pan was pretty hot already.

Chopped up that zucchini and bell pepper real small. Added them to the pan. Stirred everything non-stop. It looked like a weird mess.
Seasoning time! Sprinkled on:
- Turmeric (makes it yellow, looks kinda eggy!)
- Garlic powder
- Onion powder
- Big pinch of nutritional yeast (cheesy flavor, extra protein)
- Salt and cracked black pepper
Kept stirring! Didn’t want burnt bits. Cooked until the veggies lost their crunch and the tofu kinda dried out a little. Dumped it straight onto a plate.
Honest review? Smelled amazing, tasted savory and filling. But… looked like bright yellow gravel mixed with green and red bits. Whatever. Got a ton of veggies in and almost no calories. Used one pan again. Win.
Lessons Learned
Verdict? Quick oats win for speed when you’re half-asleep and hangry. Peanut butter + berries is the key combo, keeps it interesting.

Tofu scramble wins for volume. That plate piled high keeps hunger away FOREVER. Looks ugly as heck though. Must cook veggies first next time before adding tofu crumbles? Maybe less watery zucchini.
Both are cheap, use one pot/pan, pack in protein and fiber, and leave me feeling full without the heavy bloat. Exactly what I wanted for dropping weight vegan-style.
