Woke up this morning feeling that thyroid struggle again. You know how it is – tired but wired, weight just sticks like glue. Saw my doc last week and she basically said my breakfasts were screwing me over. All those quick oats and sugary cereals? Total thyroid killers apparently.

The Shakeup Plan
Grabbed my laptop first thing and started digging around. Needed simple stuff – no fancy ingredients, fast to make when I’m half-asleep. Found three big rules for thyroid breakfasts:
- Protein first: Helps with those stubborn hormone levels
- Fat’s your friend: Brain needs it, thyroid likes it
- Carbs? Only the slow kind: No sugar spikes allowed
Kitchen Disaster Zone
Raided my fridge like a madwoman. Found eggs – check. Saw avocado going brown – perfect. Almost tripped over the dog grabbing spinach from the bottom drawer. Seriously need to reorganize that thing.
Tossed two eggs in a bowl with a splash of water (makes ’em fluffier I heard). Scrambled like my life depended on it. Threw handfuls of spinach into the pan while the eggs cooked – watched those leaves shrink down to nothing. Felt kinda cool actually.
Plate Mess & Taste Test
Dumped the green eggs on a plate. Sliced that sad avocado – half was brown mush. Scooped the good part out, smashed it with salt and pepper. Slapped it next to the eggs. Whole thing looked like baby puke but whatever.
Took first bite… holy crap. Creamy avocado with those soft eggs? Way better than cereal. Wolfed it down standing at the counter while my coffee went cold.
Two Weeks Later
Been doing variations of this daily:
- Swapped spinach for kale when spinach ran out – chewier but fine
- Tried turkey bacon once – made eggs taste like rubber
- Forgot to shop? Just eggs + half avocado still works
Scale hasn’t magically dropped 20 pounds but my jeans feel looser around the waist. Energy’s more steady too – no 10am crash begging for donuts. Still miss pancakes sometimes though.
Real talk: Still screw this up on busy mornings. Last Tuesday ate a granola bar in the car and felt like garbage by lunch. Thyroid don’t play. Back to eggs the next day.
